Ingredients

  • 31/2 cups mango (about 2 medium ripe mangoes)
  • 1 red bell pepper (minced)
  • 1 jalapeno pepper (minced)
  • 1 shallot (minced)
  • 4 tsps fresh lime juice
  • 1 tsp salt

Preparation

In a food processor or heavy duty blender, add the mango and puree until smooth.

Transfer to a medium mixing bowl and add the shallot, red pepper, jalapeno, and lime juice. Combine and season with salt to taste.

Cover and keep refrigerated until ready to use.
