Ingredients

  • 2 Tbsp Olive Oil

    1/2 lb ground Turkey

    4 cloves Garlic (minced)

    2 large Shallots or 1/2 medium Onion (diced)

    1 cup Carrots (shredded or diced)

    2 cups Zucchini (diced)

    1 cup cooked Brown Rice

    1/2 cup Roasted or Sun-dried Tomatoes (chopped)

    1/4 cup Pine Nuts (toasted)

    1-2 tsp Italian Seasoning

    1/2 tsp Kosher Salt

    1/4 tsp Black Pepper

    1 Lemon (cut in half)

Preparation

Gather ALL ingredients, measure, and implement prep steps (chop, dice, etc)

In a large skillet or wok on medium heat, heat OLIVE OIL until shimmering (about 2 min)

Add ground turkey by breaking into small pieces; heat and stir until thoroughly cooked; remove and set aside

Add garlic and shallots/onion; sauté (about 2 min)

Add carrots and zucchini; sauté until slightly translucent (4-6 min)

Add cooked turkey back to skillet; stir in cooked rice, tomatoes, pine nuts, italian seasoning, salt, and pepper

Continue on medium heat; stir as needed until ingredients are tender and thoroughly heated (about 5 min)

Remove from heat; squeeze lemon over dish upon serving
