Preheat oven to 400°F. Cook bacon in large skillet over medium heat until crisp; transfer to paper towels. Pour off drippings from skillet; reserve drippings. Add the onion, green pepper and spinach to pan and toss over medium heat, for about 1 minute. Crumble bacon. Gently crack 1 egg into each muffin cup or ramekin, keeping yolk intact. Evenly distribute the sautéed veggies into each muffin cup or ramekin. Top with goat cheese. Sprinkle with salt and pepper.
Bake until the eggs are cooked to desired doneness, 10 to 15 minutes for medium set or 15 to 18 minutes for hard set.
